For someone potentially in the market for a used X3 M40i, what are the major differences between 18, 19, 20, if any?

one noticeable difference between 18 +19. the 18s don't come with m sport steering wheel, but starting from 19s they do

also I believe after 18 BMW had to install opf which makes the exhaust a bit quieter

BMW increased the horsepower rating in the 2020 X3 M40i to 382 HP (27 more than in the 2018 and 2019 models). The 2020 X3 M40i is reported to be about 0.2 seconds quicker 0 to 60 mph than the 2018 or 2019 models.

Ward's Automotive reported the following changes for 2020 in the B58 engine used in the X3 M40i:
-25% reduction in turbo impeller mass for quicker response.
-New twin-scroll turbocharger integrated into steel exhaust manifold for faster response and more power. Previously, exhaust manifold and turbo were two separate items.
-Lower compression ratio to offset greater turbo boost.
-New high-precision direct injection operating at 350 bar of pressure (5,076 psi), up from 200 bar (2,900 psi) in previous 340i sedan.
-New dual-branch exhaust system.
-New eighth-generation DME 8.6T.1 engine management.
-Split cooling circuits – low temp for air-to-liquid intercooler and high temp for engine cooling.
-One-piece timing chain reduces friction compared to previous two-piece timing chain.

Consumer Reports ranked the first year of the G01 X3 in 2018 as less reliable than the 2019. It is not unusual for the first model year of a re-design to have some "teething" problems. Of course, this is a generalization that may not apply to a specific vehicle. In addition, problems that exist may have already been addressed in a 2018 model by the original owner.

The B58 has been around for longer than the G01, too.

The exhaust sound of the 2018 and 2019 US models has the loud burbles and pops (backfires) every time you lift your foot off the gas (decelerate) when driving in Sport and Sport Plus modes (especially in Sport Plus). I know a lot of the owners really like these exhaust noises, but I do not. There's no way to turn it off (other than tuning) when you're in Sport or Sport Plus except for changing the "Engine" setting to Comfort or Eco which affects the throttle response. The 2020 and later models do not have the constant loud burbles and pops upon deceleration. So, if the loud burbles and pops are important to you, you will probably want a 2018 or 2019 model.
