Freekeh pilaf!
Tasty and healthy. 1c uncooked freekeh 4c chicken stock or water 1 onion minced 1 garlic glove minced 1 tomato chopped 1/2 bunch cilantro chopped 1/2 bunch mint chopped 1 dried red chile 3 small yellow potatoes cut into bite-sized pieces Whole spices: Cinnamon, 1 inch Cumin, 1T Coriander, 1t Cloves, 3-4 Cardamom, 2-3 Ground spices: Black pepper Allspice Hungarian paprika Salt to taste EVOO Sautee onion until soft, add garlic and cook. Add chopped tomato and cook until soft. Add red chile and all spices, cook until spices bloom. Add potatoes and cook. Add freekeh and stir well. Add mint and coriander. Add water or stock to cover mixture and simmer on low heat. Continue to add liquid and simmer until freekeh is al dente, 30-45 minutes. Plate and garnish with more mint and cilantro, and sliced tomatoes. Serve with grilled flatbread. |

Goes by several names that I know of. Chilupe is the only one that is PC that I know. Fritos, ground turkey, chili, cheese, sour cream, and lettuce.
