You don't consider Mocka? I believe it's a nice break from the black, and good with Sophisto Gray exterior, and I think you can get it with ventilated seats.

Nah wife doesn't like mocha, I think I'm sticking with the sports seats for now, so cognac or black with blue stitching. |
Get the cognac, you will be happy and more importantly, your wife will love it.
As for the trim, honestly I think a wood trim would go best. I have the dark oak wood because I wanted the combination of wood and gloss for more contrast and a little more umph from the ambient lighting. |
I think I saw your post of your car with cognac, very nice. Right now I'm leaning towards cognac, mostly for the contrast between the graphite paint. Does the cognac leather get dirty easily? I would assume it needs additional care compared to black..
