I could describe my handling (with Continentials) as "twitchy". Meaning that the slightest change in wheel position cause the vehicle to go in that direction. This also means I have to do constant corrections to keep it strait due to imperfections in the road.
Could this be caused by the tires or is it just the steering?

That's the steering. If you car was tramlining then that would be different.
