Based on the fact that the 19" rims on my current M-sport 245/45R19, does this not lead one to presume the 8.5x19 is correct?

The right size tyre for the G01 X3 on a 19" wheel would be a 245/50.
The 245/45 would be too small a rolling radius.
An 8.5 inch rim width would still work with the correct 245/50 tyres, you just need to watch out for the offset (ET) to make sure the wheels wouldn't stick in too far (hit the suspension!) or stick out too far (hit the wheelarch!).

Yes, and the wheel calculator I linked above can help guessing these things.
And usually BMW got narrower stock rims, to have more rubber protecting the rim from curbs. What is not in the calculations here are rim and wheel load index, and how each rim and tire combo plays together, according to respective manufacture specs. Your tire shop should be able to verify that for you, once you selected a few choices.
