I have the right side of my Nav display typically set to show "Entertainment Details". When I use Pandora the display shows the colorful album cover graphic. Although this looks whiz-bang, I would much prefer the simple, easily readable text, that appears momentarily right after a new song starts, to remain.

The text (Artist, song title, etc.) on the album cover graphic is too hard to read while driving whereas a simple text screen is very easy to read at a glance.

Although I looked and have not found it, is there any way to turn off the colorful but useless album cover graphics?

The only way I've been able to do this was to play my music from my phone via Bluetooth connection. It definitely doesn't display the artwork and leaves the screen with the Artist/Title/Track details just as you've described it.
