So, they measure the door, bolt it on, then a while later the door comes off! Didn't they just undo all that critical laser measurement?

When they take the doors off during final assembly they leave the hinges on. They do this so they don't have to redo all the work that has been done already and its more efficient to do final assembly of everything with the doors not in place.
Also, the doors have to be painted at the same time as the body to account for slight variances in paint.
